ABOUT FOUNDER’S CUT

The first release from our own House of Rare label, and the first from our own distillery, NOM 1648, located in El Arenal, Los Valles. 

The start of a new chapter in our story, this release was limited to 777 bottles, and was presented in a hand-blown crystal decanter adorned with a silver-alloy agave emblem.

TASTING NOTES

Nose

Cooked agave upfront with deep earthy notes and strong minerality. Fresh eucalyptus and green herbal tones (mint leaf, bay, wild herbs), balanced by subtle citrus peel, white pepper, and a soft vegetal sweetness.

Palate

Rich and structured entry of roasted agave and texture. Herbal freshness unfolds mid-palate: eucalyptus, green tea, and rosemary layered with mineral salinity, black pepper, and hints of olive brine. The mouthfeel is round, elegant, and persistent.

Finish

Long, clean, and evolving. Herbal and mineral notes linger with cooling eucalyptus, gentle spice, and a refined earthy dryness that invites another sip.
